Mint Julep
Kentucky Derby Favorite
Drink, May 1st!!
Fresh mint sprigs 4
Bourbon whiskey 2 1/2 oz.
Powdered sugar 1tsp
Water 2 tsp
Muddle mint leaves, powdered sugar, and water in a collins glass. Fill the glass with shaved or crushed ice and add bourbon. Top with more ice and garnish with a mint sprig. Serve with a straw.

Ingredients:
3 to 4 lb roasting chicken, preferably free
range
1/2 to 3/4 cup olive oil, or to taste
1 to 2 lemons, halved
about 8 whole garlic cloves
Kosher salt
ground pepper to taste
8 to 10
small new potatoes (small red potatoes will do)
5 large carrots or 8 small
5 large celery
stalks
4 turnips
any other favorite root
vegetable
1 tablespoon chopped fresh thyme,
rosemary, or oregano or 2 teaspoons dried
Wash chicken under running cold water and pull out the wrapped gizzard and liver found in the cavity. (If you like you may put the "innards" in roasting pan with the chicken.) Pat the chicken dry and place it in middle of a roasting pan. Drizzle the chicken with some of the olive oil, put the halved lemons into the cavity with some of the garlic, and sprinkle the chicken with salt and pepper to taste.
Wash and trim the vegetables. There is no need to peel the vegetables, just remove root stems (unless you prefer your vegetables peeled). Halve the potatoes, the carrots, the celery, and the turnips. Arrange the vegetables and the remaining garlic around the chicken in the roasting pan, sprinkle in the herbs, and drizzle the vegetables with the olive oil and salt and pepper to taste. Roast the chicken and vegetables in a preheated 450º F oven for 20 minutes, or until the skin is brown. Baste the chicken with the juices and stir the vegetable mixture and continue roasting for 8 more minutes. Reduce the heat to 325º F, baste and stir vegetables again, and roast the chicken for 30 to 35 more minutes, or until an instant-read thermometer reads 160ºF when inserted in thickest part of thigh. Total roasting time: between 50 and 70 minutes. Serve the chicken with the roasted vegetables. A side dish of pureed potatoes complements the roasted vegetables.
